Es verdad que en este plato uno de los ingredientes más importantes es el achiote pero me fue imposible de encontrar y lo he sustituido por una pasta de achiote casera.

Ingredientes (4 pers.):
Cabezada de cerdo 1 Kg aprox
Zumo de 2 naranjas
Orégano 1 cucharadita
Comino 1 cucharadita
Vinagre de vino blanco 3 cucharadas
Pasta de achiote sin achiote 150 gr
o 180 gr de achiote
Aceite de oliva suave 0,4º 50 ml
Sal y pimienta
1 Cebolla
Para la cebolla encurtida
10 cebollas moradas
1 Chile habanero
1 Lima
Sal
Para la salsa de Yogur
350 gr de Yogur Griego
1 Lima
Perejil o cilantro
Sal y pimienta
Pasta de Achiote sustituto
6 cucharadas de pimentón dulce
3 cucharadas de orégano
1 cucharada de comino
Vinagre de vino blanco 4 cucharadas soperas
4 Dientes de ajo

¿Cómo hacer cochinita pibil?
En primer lugar preparamos el adobo para el cual, en un bol, ponemos el zumo de naranja, el orégano, el comino, vinagre de vino blanco, la pasta de achiote y aceite de oliva suave y trituramos todo con la túrmix.
A continuación hacemos unos cortes a la cabezada de cerdo para que penetre bien el adobo y salpimentamos.

En un bol ponemos la cebolla junto con el zumo de una Lima, un chile habanero y un poco de pimienta.
Preparamos también una salsa de yogur para la cual en otro bol pondremos el zumo de una lima, yogur griego, perejil o cilantro picado, sal y pimienta.
Por último, una vez lista la carne, la vamos a ir deshilachando con dos tenedores.
Calentamos las tortitas de trigo justo antes de comer y ya estamos preparados para disfrutar de este plato.
