INGREDIENTS
Cochinita Pibil:2 kg pork, neck fillet or shoulder
Banana leaves (optional)
1 cup white vinegar
150 g achiote paste
1 tbsp. salt
4 limes, juiced
3 grapefruits, juiced
3 oranges, juiced
Pickled Onions:1 medium red onion, thinly sliced
1 cup vinegar
3 limes, juiced
2 oranges, juiced
1 tsp. salt
1 tbsp. sugar

Corn tortillas, small (2-3 pieces pers.) 2 limes, cut in wedges
3-4 avocados, sliced
1 tbsp. oregano

INSTRUCTIONS
1. In a large bowl or container (big enough to fit the pork) mix achiote paste, vinegar, salt and juice from the limes, grapes and oranges.
2. Wisk or blend the mixture until all of the ingredients are dissolved.
3. Slice the pork into 1.5-inch chunks.
4. Place the meat in a container, pour the marinade over and massage it into the meat. Cover and refrigerate for at least 4 hours or ideally overnight. Turn the pork at least once in the marinade to ensure even saturation.
5. Preheat the oven to 120 degrees.
6. For a more a smokey taste, roast the pork on a grill or a skillet about 10 min. on each side before cooking.
7. Place banana leaves in a large oven-safe container, then place the marinated meat in it and cover it well with the banana leaves and a lid before cooking.
8. Place the container in the preheated Dutch oven, and slow-cook for 4 hours.
9. Shred the tender Cochinita Pibil into bite-size pieces and serve it on the warm corn tortillas (taco style) together with avocado, lime wedges, oregano, and the pickled onions. Eat and enjoy 😋
