Pork Meatballs in Tomato Sauce with Pasta

2 garlic cloves, finely diced
1 onion, diced
Olive oil, for frying
500g pork mince
½ bunch rosemary, leaves finely chopped
½ bunch tarragon, finely chopped
½ bunch flat-leaf parsley, finely chopped
½ bunch basil, finely chopped
1 egg yolk
Finely grated parmesan, to serve
Cooked al dente pasta, to serve
2 onions, roughly chopped
2 garlic cloves, finely sliced
1 rosemary sprig, leaves chopped
2 x 400g cans tomatoes
- To make the tomato sauce, cook the onion and garlic for 5 minutes over medium heat. Season. Add the rosemary, tomatoes and water. Reduce heat to low and simmer for 30 minutes.
- Meanwhile, to make the meatballs, preheat fan-forced oven to 180°C. Line a baking tray with baking paper. Over medium heat, cook the garlic and onion in olive oil for about 10 minutes or until soft. Set aside to cool.
- Place the mince in a mixing bowl with the breadcrumbs, rosemary, tarragon, parsley, basil, onion mixture, egg and egg yolk. Season. Using clean hands, mix and incorporate the ingredients together. Shape the mixture into golf-ball sized shapes. Place on the lined tray. Cover with the tomato sauce and sprinkle with parmesan.
- Bake in the oven for 30 minutes. Serve immediately with pasta. Alternatively, serve with salad and flatbread for lunch.
