RECIPE: Chicken Marsala

4 breast cutlets
Flour for dredging (Einkorn Flour) seasoned salt/pepper
Mushrooms – Bella Mushrooms 2 containers 8 ounces
Butter 3-4 tablespoons
Olive oil 2-3 TBSP
3/4 cup Marsala wine

Seasonings:
Salt
Pepper
garlics whole and granulated garlic
Thyme

Season chicken breast both sides salt, pepper, and granulated garlic. Season flour with same seasoning. Dredge chicken in flour. Heat olive oil 2-3 tbsp olive oil and 2 tbsp of butter over medium heat. I used a cast iron skillet. Sauté chicken 3-4 minutes on side one and turn over when chicken is a slight golden brown and continue to brown until golden. Turn each piece only once. When done remove from pan and drain on paper towels. Add more butter to same pan and add mushrooms. Sauté a few minutes add salt, pepper, and garlic. May need to add more olive oil. Add 3/4 cup of Marsala wine. And sauté until wine reduces to a light brown gravy and mushrooms are tender.

Serve over pasta.
