1000g spaghetti pasta
700g feta cheese
1000g cherry tomatoes
1 cup olive oil
Red pepper flakes
Salt and pepper to taste
Bunch of Fresh Basil leaves **
** I don’t have basil leaves on hand so I substituted it with basil pesto (1 cup)
Preheat the oven at 400 F.
In a large pot, boil pasta according to package instructions.
In large sized baking dish place the feta cheese in the center.
Toss whole cherry tomatoes and spread all over the baking dish. Add red pepper flakes on top of the feta cheese.
Drizzle olive oil over the tomatoes and feta cheese. Add garlic and season with salt and pepper.
Bake until tomatoes have burst and feta has softened, approximately 30 minutes. Increase oven temperature to 450° F. Continue to bake until tomatoes and feta are golden brown, approximately 10 minutes.
Mash feta cheese and tomatoes with a fork and mix well.
Add pasta, basil pesto and shredded chicken. Mix until well combined.
