Today I’m revamping my sister in law’s Taco Lasagna Recipe Ketostyle! The original recipe calls for black beans and refried beans. I’m using the low carb Eden Valley organic black soy beans for just around 2 net carbs per serving in this lasagna, and I’m eliminating the refried beans altogether. Also, her recipe calls for flour tortillas and I’m switching those out for the Egglife Foods Brand Egg White Wraps (which have 0, that’s right, I said zero carbs)! This is a family favorite meal and now it is keto approved and no one is the wiser, as it’s so delicious! Taco Seasoning Recipe:
1 T Chili Powder
1 1/2 tsp Cumin
1 tsp Paprika
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Oregano
1/2 tsp Pink Salt
1/4 tsp Black Pepper
1/4 tsp Red Pepper Flakes
1/4 tsp Xanthan Gum (optional for thickening)
Casserole Recipe:
1 Can Eden Organic Black Soybeans
8 Egglife Foods Brand Egg White Wraps
1 # Ground Beef
1/2 C Diced Onion
1/2 C Diced Green (or Red) Bell Pepper
4 C Mexican Blend Shredded Cheese
1 C Shredded Cheddar Cheese
1 Can Rotel Tomatoes w/Diced Chiles
2/3 C Water
Directions: Preheat oven to 350 degrees
Brown ground beef, onions & peppers; drain. Return to stovetop then add taco seasoning (listed above) and water and stir. Then add in drained beans, and drained tomatoes. Bring to a boil and cook for 2-3 minutes until thickened slightly. Remove from stove. Take 8 egg white wraps and cut into 1 inch strips, you should 5-6 strips per wrap. Now lets start layering the lasagna. Spray a glass 9 x 13 pan with pan with olive oil spray. Lay wrap strips (probably a total of 2 1/2 wraps per layer) in pan. Then add half the meat mixture on top. Sprinkle 2 C cheese on top. Then add another layer of wrap strips and top with the other half of the meat mixture. Add another 2 C of cheese on top. The final layer is more wrap strips and a cup of cheese sprinkled on top. Cover with foil and bake for 30 minutes. Uncover and bake an additional 15-20 minutes until cheese is nice and bubbly. Let rest for 5-10 minutes before slicing. Then serve with taco fixings like lettuce, diced onion, tomato, avocado, sour cream and taco sauce. Enjoy!
