Ingredientes:. 21 piezas (7 porciones)

Cochinita Pibil (Receta: )
2 tazas de masa de maiz instantánea (Maseca) ó masa de maiz
3 cucharadas de harina de trigo
Agua templada
1 taza de aceite para freír
Frijoles refritos
Salsa de Cebolla encurtida con chile habanero (Receta: )

Modo de preparación:

Para la masa: En un recipiente ponemos la masa de maíz instantánea o la masa de maíz fresca y agregamos la harina de trigo mezclar un poco y agregar el agua de poco a poco hasta obtener una textura suave pero firme (como play doh) y que se despegue del recipiente, si te pasaste de agua solo agrega un poco más masa y harina de trigo proporcionalmente.

Ya que tienemos la masa, hacemos unas bolitas pequeñas de aproximadamente 2 cm de diámetro, las aplastamos un poco en la tortillería o con las manos para que nos queden de aproximadamente 3 milímetros de ancho (más gorditas qué una tortilla). En un sartén ponemos el aceite y esperamos a que caliente, metemos a freír los panuchos uno por uno 1 minuto por lado o hasta que estén doradas (con una cuchara echar del mismo aceite caliente en la superficie del panucho para que esponje con facilidad), tenemos que estar nivelado la temperatura de la parrilla para mantener el aceite a la misma temperatura. Los ponemos en papel absorvente.

Para prepararlos, tradicionalmente abrimos el panucho y untamos un poco de frijoles y volvemos a cerrar, pero por practicidad solo untar los frijoles sin abrir el panucho, en encima ponemos la cochinita pibil, después la salsa de cebolla encurtida con habanero y por último una rebanada de aguacate para decorar. Se comen como tacos y si gustas agregar salsa de habanero para más picor.
