32 ounces salsa of your choice
3 cups cooked brown rice
1 28 ounce can black beans, drained and rinsed
1 8 ounce package nondairy cheddar cheese
5 or 6 ounce package crushed multigrain tortilla chips (low sodium variety)

DIRECTIONS:

1.) Preheat oven to 350 F.
2.) Heat a large oven proof pot over medium heat.
3.) Place a few tablespoons of olive oil in the pot.
4.) Put onions, bell peppers, and jalapeño peppers in pot. Sauté till onions are
tender and translucent, 8 to 10 minutes.
5.) Add spices, garlic, and lemon juice to onion mixture, cook another 2 or 3 minutes.
6.) Add nutritional yeast, beans, rice, and salsa to the pot, cook till the mixture is
warmed through.
7.) Remove pot from heat and mix in the cheese. Level the mixture.
8.) Spread crushed tortilla chips over the mixture in a nice even layer.
9.) Place pot in oven and cook 30 minutes.

Serve hot or refrigerate left overs.
