2 packets taco seasoning
1 onion chopped
1 green pepper chopped
3 cloves garlic chopped
1 package frozen corn
2 cans fat free refried beans
1 package shredded Mexican cheese blend
3 chopped green onions
1 can sliced black olives
1 package frozen tater tots

Hi there, Jess in the Rada Kitchen, thanks for joining me. Today I’m going to show you a recipe I make at home. This is a Mexican tater tot casserole. We’re going to ditch those processed ingredients and replace them with rich and flavorful vegetables.
Here I have about 1.5 lbs. of high-quality beef. I’m going to get it going in the pan and break it up a little with my Rada Non-Scratch Spatula. We are ready to prep our veggies. Here we have the holy trinity of flavor building: garlic, onion, and green bell pepper. I’m just going to smash my garlic with my Rada Cook’s Knife. Give it a quick chop. Next is our onion. Let’s just take the ends off there, discard, then cut it in half, keeping the root intact. Chop. Now I’m going to remove the seeds from the green bell pepper, cut, and chop. We’re going to cut the pepper into strips. These are all going into our pan with our ground beef.
To this I’ve added two packages of my favorite low-sodium taco seasoning. We’re just going to let this cook until the veggies are nice and tender. Then we’re going to come back in and add our canned tomatoes with green chilies. While that is cooking we’ve preheated our oven to 425 degrees. Now that the veggies are softening up we’re going to add a can of tomatoes with diced green chilies. And then some black beans. Stir it all together with my Rada Non-Scratch Spoon. We’ll let this go for a few more minutes.
I am going to place this mixture into my Rada Rectangular Baker. Now, remember, you can add any combination of vegetables you want to this. I’m going to add some corn. We’re going to mix this up. It smells so good already. Then we’re going to put a layer of warmed-up refried beans on top, then top it with a big package of tater tots. You can put them on in rows but I’m just putting them on however for a more rustic look. We’re going to put them in the oven for 30 minutes.
I’ve pulled the casserole from the oven. I’m going to load the top up with some cheese, a Mexican blend. Then I have some fresh chopped green onion, the key flavor builder at the end, and some sliced black olives. It’ll go back into the oven until the cheese is melted.
