Avocado Egg Rolls
-package of egg roll wrappers
-guacamole
-cooked beans and corn
-water

Lay your egg roll wrappers on a diagonal, like a diamond shape. Place one small teaspoon of guacamole and one small teaspoon of corn and beans on the bottom portion of wrapper. Dip your finger in some water and coat the top of the wrapper so it will stick when rolled. Follow the package instructions for how to roll the wrapper. Cook in your air fryer at 350 degrees for 5-7 minutes and enjoy!!

Tostado Bowls
-package of large tostada shells
-chicken breast seasoned to your families like
-refried beans, warmed
-Mexican style rice, I used boxed
-can of Rotel tomatoes
-ear of corn, with the kernels taken off
-half a red onion, small dice
-chopped romaine lettuce
-cheese of choice
-green onion and cilantro for garnish

Preheat 2 tablespoons of olive oil in a cast iron skillet over medium heat. Season chicken, I used an all purpose seasoning, chili powder and pepper. Cook chicken until golden brown and full cooked through. Set aside. If need be, add a bit more olive oil to pan. Add onion and corn, cooking for several minutes to soften and gain some color. Add rotel. Set aside. Cook tostada shells according to package direction. Fill tostadas to you hearts content. This is a great recipe because you can customize it to your families preferences. Use ground beef, fish, turkey even tofu would be delicious. I topped mine with an avocado salsa and dinner was delicious

Chicken Marsala
-chicken breast
-1/2 cup of flour for dredging
-3/4 cup Marsala wine
-1/2 cup heavy cream
-heaping tablespoon of mined garlic
-2 tablespoons of butter
-package of sliced mushrooms

Preheat non stick skillet with olive oil over medium heat. Preheat oven to 350 degrees. Season chicken, I used seasoned salt, garlic powder and pepper. Dredge in flour and cook in skillet until golden brown. Chicken does not need to be fully cooked. Place chicken in oven while you make the sauce. Add butter to chicken drippings and cook mushrooms until browned, about 5-7 minutes. Turn flame to low, add Marsala wine and heavy cream and garlic. Add chicken back to pan, bring to a simmer. I served mine over mashed potatoes and steamed green beans. This was SO good. A show stopper that would definitely impress company.
