Taco Pie: 1 lb ground turkey, 3 green onions (diced) 4 eggs (I used 3 plus 3 Tbs Egg Whites) 1/4 cup Salsa 1/2 tsp salt, Taco seasoning (I make my own) 1/2 cup Heavy Whipping Cream, 1 cup Mexican Cheese (I used 2% cheddar cheese) Prepare 9″ Pie Dish w/ cooking spray. Brown meat, Drain Fat and Stir in Taco seasoning to your liking. add 1/4 cup water and simmer for a couple minutes. In med bowl, whisk together eggs & heavy cream. Stir in gr. onions, salsa, 1/2 the cheese and salt. Stir meat into egg mixture. Pour in pie dish. Sprinkle with remaining cheese. Bake at 350 35-40 min. Optional: Top with lettuce, tomatoes, sour cream.
