Chicken & Feta Sausage Rolls
Pastry.
250 g. gluten free plain flour
1 tsp. xanthan gum.
150g. Cold butter chopped.
125ml sour cream
1/3 cup of cold water
Filling.
600g. Chicken mince
1 cup gluten free fresh bread crumbs
1 small onion chopped
1/2 cup crumbled feta cheese
1dspn. fresh thyme leaves
1 dspn. chopped parsley.
1/4 Tsp pepper
1/2 tsp. salt
1 egg and a little milk to make a glaze.
Place butter, flour and xanthan gum in food processor and blitz until resembles bread crumbs. Add water and sour cream and mix until just coming together.
Remove from processor and place on floured board and kneed to bring together, Wrap inCling wrap and place in refrigerator for 30 mins to rest.
Place mince, bread crumbs, herbs, onion and salt and pepper in a bowl and mix well. Stir through feta cheese.
Remove pastry from fridge and roll out to a large square. Make two rows of the filling.
Brush the pastry with egg wash and roll over to cover the filling slice off and place on a baking paper line tray.
Prick along the rolls with a fork and mark slits to the size you desire.
Brush top with the egg wash.Bake in a preheated 180c fan forced oven for approx 25 to 30 mins.
Allow to cool slightly before cutting into lengths.
