Coconut Peanut Noodles
This oil-free vegan recipe is an excellent source of plant-based protein and healthy fats. It only takes about 15 minutes from start to finish, and makes enough for 3-4 servings. In my opinion, the toppings really make the dish so don’t skimp on those! You can also top this crispy tofu or your favorite vegan chicken to make it even more satisfying 🙂
Sauce:
1 cup peanut butter
1/2 cup coconut milk
2 tbsp soy sauce (I used low sodium)
1/2 tsp sesame oil
1 tsp white rice vinegar
2 limes, juiced
1 tsp ground ginger
1/2 tsp garlic powder
6 dashes of cayenne pepper
3 grinds of salt (or to taste)
Veggies:
1 zucchini
1 carrot
1-2 scallions
Noodles:
2 bundles of soba noodles
Toppings:
lime wedges
scallions
cilantro
sesame seeds
red pepper flakes
Start by mixing your coconut milk if needed, then make veggie noodles by running a vegetable peelers down the length of a zucchini and one peeled carrot. Add vegetable ribbons to a bowl and set aside.
In a blender combine all of the sauce ingredients and blend until very smooth and set aside.
Then cook the noodles to the package directions and use this time to cut up the scallions and cilantro.
When the noodles are cooked, rinse lightly with water to prevent sticking and toss together with vegetable ribbons, cilantro, scallions, and coconut peanut sauce.
Tope with sesame seeds, red pepper flakes, more scallions and a drizzle of fresh lime juice.
