Ingredients: (2 Servings)
Beef short plate 200g
Bean Sprouts 150g
Scallion, green part 2 ea
Wheat Noodles 200g
Garlic, minced 2 cloves
Black sesame 1 tsp
Sauce:
Garlic minced 3 cloves
Peanut butter 4 Tbsp
Fish Sauce 1/2 Tbsp
Red Chili, chopped 1 ea
Ginger, minced 1 Tbsp
Scallion, white part 2 ea
Sugar 2 Tbsp
Oyster sauce 1 Tbsp
Sriracha 1 Tbsp
Hot noodle starch water 1/2 cup
Vegetable oil 1 Tbsp
Directions:
1. Chop garlic, ginger, chili, and cut scallions into rounds.
2. Boil salted water and cook noodles to your preferred doneness. Reserve 1 cup of the starchy water. Rinse the noodles with cold water immediately to stop cooking. Set aside.
3. On a saucepan with oil, sweat scallion whites, garlic ginger for 2 minutes on low heat.
4. Add red chili, sugar and when the sugar is melted add fish sauce, oyster sauce, Sriracha, starchy water, and peanut butter.
5. Bring the sauce to a simmer and fold everything until fully incorporated.
6. On a wok add a touch of vegetable oil and cook minced garlic and add beef to stir fry seasoned with salt and pepper.
7. Add beansprouts when the beef slices are fully cooked. Set aside.
8. In the same wok, add noodles and the peanut sauce and lightly stir fry to coat the surface of the noodles.
9. Plate the noodles in a bowl and add top with stirfried beef and beansprouts.
10. Drizzle more peanut sauce on top and garnish with scallion green rounds and sesame seeds.
