I love the smokey flavor of this spicy Thai peanut sauce. This Thai noodle dish has been in my rotation for about 30 years now, for a good reason. I hope you give it a try, I think you’ll love this as much as I do. What makes this unique to most Thai sauces, is the replacement of a typical chili oil with chipotle chili sauce and chili’s for that amazing smokey flavor that just works incredibly well.
ingredients:
1 tbsp thin style spaghetti or noodles
1/2 cup creamy peanut butter (I like to use fresh ground if possible)
2 tbsp lemon or lime juice
1/4 cup soy sauce
1tsp red pepper flakes
3 tbsp sesame oil
1/2 tsp chipotle sauce
3/4 cup olive oil
8 green onions / cut diagonally
1/3 cup chopped cilantro
2-3 tbsp chopped peanuts
sauce:
Whisk together peanut butter, lime or lemon juice and soy sauce. Then blend in the red pepper flakes, sesame oil and chipotle sauce. Set a side.
Cook noodles:
Reserve 1/2 cup of pasta water to help thin sauce if needed.
Once noodles are done add the olive oil to the noodles and mix well to keep them from sticking. This will help with the sauce too. Let the noodles sit until room temperature. tossing frequently to prevent sticking.
Pour the peanut sauce over the noodles and carefully mix well. Add some pasta water a little at a time if needed to help thin the sauce. Once this is all combined well and everything looks evenly coated, add to your serving bowl or dish and garnish with cilantro, chopped peanuts and sliced chipotle peppers. This dish is great served warm or as a cold noodle dish.
