1. Cook udon noodles according to instructions.
2. Meanwhile, heat some oil in a wok on medium high heat
3. Chop onions, baby bok choy & bell pepper and throw into the wok
4. Mix together sauce ingredients in a small bowl
5. Once udon noodles are cooked, drain and add into the wok
6. Add sauce to the wok and mix everything together. Add a splash of water.
7. Top with green onions.
