Chicken Marsala

2 lbs Chicken Cutlets – sliced thin & pounded
1/2 lb Mushrooms – sliced
2 Shallots – sliced thin
3-4 Cloves Garlic – minced
1 C Marsala Wine
1 1/2 – 2 C Chicken Stock
1 C Flour
1 tsp Salt
1/2 tsp Pepper
3 Tbsp Olive Oil
4 Tbsp Butter – divided
3 Tbsp Corn Starch
Parsley for garnish

Slice cutlets thin, pound if needed.

Place 1 c flour in a ziplock, add salt and pepper. Add chicken and shake.

In large saucepan heat 2 Tbsp olive oil and 2 Tbsp butter. Brown chicken 3-4 minutes on each side. Remove and set aside. In same pan drizzle 1 Tbsp Olive oil & 1 Tbsp butter, add mushrooms and saute until slightly browned, remove from pan. In same pan add 1 Tbsp butter, cook shallots until they just start to become translucent, add garlic and cook another minute or two. Add marsala wine and let come to a boil, add chicken stock and cook until heated through.
In small bowl add corn starch, add a little water to make a slurry, pour into gravy. Stir until thickened. Add mushrooms back into gravy and stir, add chicken and let come back to temperature.

Serve over rice or egg noodles, garnish with parsley.
