These are the meatballs from our “street food be like” video 😁❣️
And don’t be scared of the ricotta in the meatballs- it gives it nice “moisture” so they will not be dry ❣️
RECIPE: for aprox 4 people 🍝
Ingredients:
Meatballs:
-Aprox 900g meat (half and half pork shoulder and beef)
-Aprox 80g lardo
-1 cup ricotta
-1 egg
-1 spoon milk
-1 cup breadcrumbs (we used panko)
-1 handful parsley
-1 little spoon dried garlic
-salt, pepper
Sauce:
-1 little spoon olive oil
-1 onion
-1 garlic
-140g tomato paste
-800g canned tomatoes
-2dcl red wine
-1 little spoon dried oregano
-salt, pepper
Instructions:
1. Mince the meat
3. mix in the separate bowl ricotta+milk+egg, and add it to minced meat. Also add breadcrumbs, chopped parsley, salt, pepper. (You can check the salty level by making little patty and just fry it on the pan).
4. Make little balls from the meat, and roast it from all sides on the pan. And put them aside.
5. On the same pan (from the meatballs- because there is lots of flavour) roast chopped onion and garlic, until golden, aprox 5min, add oregano, salt and pepper.
6. Add tomato paste, and fry around 3 min, keep stirring (to fry off the raw tomato paste flavour).
7. Add wine and cook another minute.
8. Add canned tomatoes, and cook couple minutes.
- Spread the tomato sauce all over the meatballs, and bake it in the preheated oven – 180C/ 360F aprox 40min.
- Cook the pasta and mix it with the sauce ❣️🍝
