SPICY PEANUT NOODLES

1 (16-ounce) package Spaghetti or substitute with another pasta or noodles

1/4 cup creamy peanut butter

3-4 Tablespoons chili crisp, plus more or less if desired

2 Tablespoons toasted sesame oil

2 Tablespoons soy sauce

2 Tablespoons rice vinegar

1-2 teaspoon sugar, optional

1-2 teaspoons freshly grated ginger

1/2 to 1 cup scallions, thinly sliced

1/2 cups honey-roasted peanuts, coarsely chopped

  1. Cook pasta or noodles according to package directions.

  2. In a large bowl add sesame oil, peanut butter, soy sauce, chili crisp, rice vinegar, sugar, and grated ginger. Whisk until ingredients are well incorporated.

  3. Drain pasta or noodles. Add to peanut butter sauce. Toss until well coated. Add to serving dish. Garnish with scallions and chopped honey-roasted peanuts, optional.

TIPS: Store SPICY PEANUT NOODLES in an airtight container in the refrigerator up to 3 days. Heat in microwave 10 seconds, at a time, until warm.
